Eggplant Caponata

Ever wonder what to do with eggplant? This is a pretty simple recipe that I pull out every so often. It’s a slightly spicy and sweet dish that you can use to top anything: chicken, fish, rice pasta, or vegetables. It also freezes well, so it’s handy to make a batch and freeze part of it for future use. The recipe itself is both paleo and vegan friendly. I adapted this recipe from Everyday Food Magazine several years back. Another cool thing about this recipe is that it uses only 8 ingredients. Plus, no dairy and no gluten. Lasagna of any kind is always a bit labor-intensive and requires a good amount of prep time. You may want to save this recipe for a weekend when you can take some time and enjoy the process. Prep time: 40-ish min Bake time: … Read entire article »

Welcome to Gluten-Free Fever!

Welcome to my blog, Gluten-Free Fever! So what exactly is this blog about? I live in Portland, Oregon, which is a gluten-free paradise. Restaurants, coffee shops, grocery stores…so many of them here offer gluten-free options. Eating out can be particularly difficult for people with gluten intolerances, so I’m always on the lookout for good places to go with healthy food choices. I love to cook, I love to eat, and I love my coffee. Portland is known for both great beer and great coffee. Thankfully, I can partake in one of these at least. And I love riding my bike, whether its mountain biking, road cycling, commuting, or cyclocross. Bicycles are also a major part of what makes Portland the special place it is.
